When it comes to Cajun specialties, it just doesn’t get any better than Darrell Breaux’s kitchen. From boiled crawfish and seafood gumbo to shrimp Creole
and crawfish etouffee, Louisiana spice and the spirit- let the good times roll.

Monday -Muffuletta

Bro's Cajun style Muffuletta is "one of the great sandwiches of the world" - a muffuletta loaf, split horizontally, covered with marinated olive salad, then layers of ham, salami, provolone and lettuce. Half sandwiches or whole.

 

Tuesday - Cajun Fried Catfish

Bayou original fried catfish filets cornmeal breaded and Cajun seasoned. 

Chicken Creole

Peppers, onions, celery and chicken simmered in Bro's Creole Sauce.


Wednesday - Stuffed Pork Chop

This is one big hit, and I'll show you how to stuff pork chops like you probably have not seen yet. Served resting on Cajun rice dressing.

Jambalaya

This is a Cajun jambalaya, and is a brown-style rather than the red tomato-based jambalayas you see in New Orleans


Thursday- Barbeque Pork Steak or Chicken

You want to smoke your Cajun Barbeque at a low temperature with heavy smoke and a spicy rub.

Crab & Shrimp Stew

A unique blend of Louisiana crabmeat combined with plump gulf shrimp in a spicy creamy stew.


Friday- Chicken Fricassee

The best fricassée is made like Mama's, in an old cast iron pot. In Louisiana it is traditional to simmer a fricassée for hours.

Cajun Fried Catfish
