It was April 7th, 2010, and the restaurant was "buzzin" because there was a TV crew present. The production crew of Diners, Drive-Ins and Dives spent the whole day filming Darrell as he worked his way through the day.

Guy and the crew spent more time with Bro than anyone expected. The crew said that he felt more comfortable there than in any other place in a long time.

Darrell started by grinding some of his own smoked sausage and stuffing it. Then he and Guy made boudin and stuffed pork chops. They made jambalaya, and Po-boys and just basically had a ball cooking stuff in the lower catering kitchen.

After a couple of hours of that, everyone adjourned out to the smoke house for eating sausage, smoking chops, ribs, brisket and pork sholder.

Darrells' boys, Mark, Chad and Jarad were out by the parking lot checking out the 327 Camaro SS. Hot car.

Smokin…. From the Bayou

Guy Fieri creates a hot show with Nashville’s own Cajun- Darrell Breaux of Bro’s Cajun Cuisine.

By now, we all have heard that the Food Networks most popular show, Diners, Drive-ins and Dives** has made the trip to Nashville’s most authentic Cajun joint – Bro’s Cajun Cuisine at 3214 Charlotte Ave. The crew spent two days filming Bro’s to capture all the secrets of Bro’s popularity.

One of the most refreshing aspects of the restaurant is the smokehouse out back. Cajun recipes demand great Cajun smoked Andouille Sausage, Tasso, Chaurice and more. Many restaurants make their gumbo with andouille sausage- very few make their own andouille first - then make the gumbo. Bro’s smoked sausage is so good; you’ll slap your mama.

Guy sat with Bro under the smokehouse awning at dusk as they shared some stories over a bowl of gumbo. Darrell was saying…”We put the Smokehouse on a trailer and brought it up from Louisiana this past year and it has been a jewel. Wallace Breaux, my first cousin, built the smokehouse. He used cypress wood grown in the bayou near Lafayette, and it has been cured for years making our old family recipe sausage. The same ingredients our ancestors used in Alsace-Lorraine France 200 years ago are still being used right here.”

Yes, he certainly he smokes his pork shoulder, ribs, hams and turkeys, all with the signature Cajun style. Its all part of the tradition of this family owned restaurant.
