We put the Smokehouse on a trailer and brought it up from Louisiana
this past year and it has been a jewel. The smokehouse was built by
Wallace Breaux, my first cousin. He used cypress wood grown in the
bayou near Lafayette, and it has been cured for years making our old
family recipe sausage. The same ingredients our ancestors used in
Alsace-Lorraine France 200 years ago, are still being used right here. |
